  • Blanch the tomatoes in boiling water for one minute, then transfer to an ice bath to peel easily. Once peeled, chop the tomatoes and set them aside.
  • In a skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until softened and translucent, about 5 minutes. Stir in the minced garlic and cook for another minute, being careful not to let it burn.
  • Transfer the onion and garlic mixture to your slow cooker. Add the chopped tomatoes, sugar substitute, salt, pepper, dried basil, dried oregano, dried thyme, and red pepper flakes. Stir to combine.
  • Set your slow cooker to low and cook for 6-8 hours, stirring occasionally, until the sauce has thickened and the flavors have melded together.
  • About 30 minutes before the cooking is complete, stir in the fresh basil.
  • Once done, use an immersion blender to puree the sauce to your desired consistency, or leave it chunky if you prefer a more rustic sauce.
  • Taste and adjust seasoning as needed. Serve immediately or let it cool before storing in jars or freezer-safe containers.
