WW Friendly Mongolian Ground Beef Noodles Directions:

  • Cook the Noodles: Prepare the whole wheat spaghetti or soba noodles according to package instructions. Drain and set aside.
  • Cook the Ground Beef: In a large nonstick skillet, heat the sesame oil over medium heat. Add the minced garlic and ginger, and cook for 1-2 minutes until fragrant. Add the lean ground beef and cook, breaking it up with a spoon, until browned and cooked through.
  • Make the Sauce: In a small bowl, whisk together the low-sodium soy sauce, hoisin sauce, rice vinegar, and brown sugar substitute. Pour the sauce over the cooked ground beef and stir to coat. Let it simmer for a few minutes to thicken slightly.
  • Add the Vegetables: Stir in the shredded carrots and cook for another 2-3 minutes until they start to soften.
  • Combine and Serve: Add the cooked noodles to the skillet and toss everything together until the noodles are well coated with the sauce. Sprinkle the sliced green onions and sesame seeds (if using) over the top.
