WW Fried Rice Balls Directions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.
  • In a large bowl, combine cauliflower rice, reduced-fat Parmesan, parsley, one egg white, salt, and pepper. Mix well.
  • Shape the mixture into balls, the size of a golf ball. Press a mozzarella cube into the center of each and reshape to fully enclose the cheese.
  • Set up a breading station: place whole wheat flour in one bowl, the remaining egg white (beaten) in a second, and whole wheat panko breadcrumbs in the third.
  • Roll each ball in flour, dip into the egg white, and coat with breadcrumbs.
  • Place on the prepared baking sheet, lightly spray the rice balls with cooking spray, and bake for 15-20 minutes, turning halfway, until golden brown and crispy.
