WW Banana Muffins Directions:

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly spray with cooking spray.
  • In a large bowl, mash the bananas until smooth. Add the eggs and whisk until well combined.
  • Stir in the Kodiak pancake mix and skim milk until the mixture forms a smooth batter.
  • Evenly divide the batter between the 12 muffin cups. Sprinkle the tops of each muffin with a pinch of cinnamon.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool for a few minutes in the tin, then transfer them to a wire rack to cool completely.
