White Lasagna Soup Directions:
- In a skillet over medium heat, cook the Italian sausage until browned. Drain excess fat, then transfer the sausage to your slow cooker.
- In the same skillet, sauté the diced onion until translucent, about 5 minutes. Add the minced garlic and cook for another minute. Transfer these to the slow cooker.
- Pour the chicken broth and water into the slow cooker. Stir in the dried basil, dried oregano, salt, and pepper.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours.
- About 30 minutes before serving, add the zucchini noodles to the slow cooker. Stir, cover, and cook on high until the noodles are tender.
- Stir in the unsweetened almond milk and Parmesan cheese until well combined. Add the chopped spinach and let it wilt in the hot soup.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
