Weight Watchers Pumpkin Whoopie Pies:

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  • In a large mixing bowl, combine the canned pumpkin puree, unsweetened applesauce, Swerve granular sweetener, Swerve Brown sugar, egg, and vanilla extract. Mix until well combined.
  • In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground cloves, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Drop spoonfuls of the batter onto the prepared baking sheets, spacing them about 2 inches apart. Use the back of the spoon to gently spread the batter into round shapes, as these will be the tops and bottoms of the whoopie pies.
  • Bake in the preheated oven for 10-12 minutes, or until the whoopie pies are set and lightly golden brown around the edges. Remove from the oven and let cool completely on the baking sheets.
  • While the whoopie pies are cooling, prepare the filling. In a small mixing bowl, combine the fat-free Greek yogurt, Swerve powdered sugar, and vanilla extract. Mix until smooth and creamy.
  • Once the whoopie pies are completely cool, spread a dollop of the filling onto the flat side of half of the whoopie pies. Top with the remaining whoopie pies to create sandwiches.
  • Serve immediately, or store the whoopie pies in an airtight container in the refrigerator for up to 3 days.
