  • 1 can (28 oz) crushed tomatoes (no salt added)
  • 4 cups low-sodium chicken broth (or vegetable broth)
  • 1 can (15 oz) tomato sauce (no sugar added)
  • 1 tbsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional for spice)
  • 6 whole wheat lasagna noodles, broken into bite-sized pieces
  • 1/2 cup fat-free ricotta cheese
  • 1/2 cup part-skim mozzarella cheese, shredded
  • 2 tbsp grated Parmesan cheese
  • 2 cups spinach (optional for added greens)
  • Salt and black pepper to taste
  • Fresh basil (for garnish)
