Weight Watchers-Friendly Lasagna Ingredients:

For the Chicken Filling:

  • 2 lbs extra-lean ground chicken
  • 1 bay leaf
  • 3 spring onions, chopped
  • 1 tsp garlic paste
  • Salt to taste
  • 4 medium tomatoes, blended (about 1½ cups)
  • 2 tbsp reduced-sugar tomato ketchup
  • 1½ tsp red chili powder
  • 1 tbsp chili garlic sauce (low-sugar version)
  • 1 tsp light soy sauce
  • ½ tsp paprika

For the White Sauce:

  • 1 tbsp cooking spray
  • 1 tbsp cooking spray entirely
  • 2 tbsp whole wheat flour
  • 2 cups unsweetened almond milk (16 fl oz)
  • 1 reduced-sodium chicken bouillon cube (optional)
  • Salt to taste
  • 1 tsp black pepper
  • ½ tsp white pepper
  • ½ tsp red chili flakes
  • 1 tsp dried oregano
  • ½ cup reduced-fat Greek yogurt

For Assembling:

  • 7 whole wheat lasagna sheets
  • 8 oz light shredded cheese (mozzarella and cheddar mix, reduced-fat)
  • Fresh basil or parsley (optional for garnish)
