- Soak and chop mushrooms: Soak the shiitake mushrooms in boiling water for 30 minutes. Once rehydrated, squeeze out excess liquid and finely chop them.
- Prepare the filling: Combine the cabbage, shiitake mushrooms, grated potato (with juice), tofu, garlic, ginger, green onion, sesame oil, soy sauce, sugar, salt, and white pepper in a bowl. Mix well until fully combined.
- Wrap dumplings: Take one wrapper at a time, wetting the edge with a little water. Place 1 tablespoon of the filling in the center and fold the wrapper to seal it, pleating the edges as you go.
- Cook dumplings: Heat 1 tbsp of canola oil in a non-stick skillet over medium-high heat. Pan-fry the dumplings for 2 minutes until golden brown on the bottom. Add 1/4 cup of water to the pan, cover, and steam for 5 minutes or until the water evaporates and the wrappers turn semi-transparent.
- Serve: Serve the dumplings hot with soy sauce and chili paste, or rice vinegar mixed with soy sauce for dipping.
