Vegetable and Cheese Bake Directions:

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper

  • Place grated zucchini in a colander, sprinkle with salt, and let drain for 15 minutes. Squeeze to remove excess moisture

  • In a bowl, beat eggs lightly, then add milk, flour, baking powder, salt, and pepper

  • Stir in zucchini, carrot, bell pepper, and green onions

  • Spread mixture evenly on baking sheet

  • Bake for 30 minutes or until golden

  • Remove from oven, sprinkle with mozzarella and Monterey Jack cheese

  • Return to oven and bake for another 6–8 minutes, until cheese is melted and bubbly

  • Garnish with dill or parsley if desired and serve hot
