Vanilla Cupcakes Directions:

  • Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  • In a bowl, whisk together the all-purpose flour, baking powder, and salt.

  • In another bowl, beat the light butter substitute and unsweetened applesauce together until well combined.

  • Add the granulated sugar substitute and continue to mix until light and fluffy.

  • Mix in the eggs one at a time, then add the vanilla extract.

  • Gradually add the dry ingredients to the wet mixture, alternating with the skim milk, mixing until just combined.

  • Divide the batter evenly among the cupcake liners, filling each about ¾ full.

  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  • Allow the cupcakes to cool in the pan for a few minutes, then transfer to a wire rack to cool completely before serving.
