Tuscan Chicken Bake Directions:

  • Preheat your oven to 350°F (175°C).
  • In each of the 5 individual bowls, stir together 1/4 cup basmati rice, 2 tablespoons tomato sauce, 1 tablespoon plain non-fat Greek yogurt, 1/4 cup sun-dried tomatoes, 1/4 cup chicken broth, 1/4 cup frozen spinach, and 1/4 cup diced asparagus.
  • Season the diced chicken breast with oregano, garlic powder, salt, and pepper. Place 5 oz of seasoned chicken in each bowl.
  • Bake in the preheated oven for 40 minutes, or until the chicken is fully cooked and the rice is tender.
  • Once done, top each bowl with 1 teaspoon grated Parmesan cheese.
  • Let cool, cover, and refrigerate or serve immediately.
