Turkey Sausage Mini Frittatas Directions

  • Preheat the oven to 350°F (175°C).
  • Lightly coat mini muffin tins with olive oil spray and set aside.
  • In a mixing bowl, combine sage, black pepper, thyme, crushed red pepper flakes, salt, and dried marjoram.
  • Add the ground turkey to the spices, mixing until fully coated. Let marinate in the fridge for 2-3 hours.
  • Heat a nonstick pan over medium heat, lightly greased with olive oil spray.
  • Add the marinated turkey and cook, breaking it up with a spoon until fully cooked.
  • Stir in the chopped spinach and cook for 5-6 minutes until softened. Set aside.
  • In another mixing bowl, whisk together eggs, unsweetened almond milk, and the remaining 1/4 tsp of black pepper and salt.
  • Pour the egg mixture evenly into the prepared mini muffin tins.
  • Add a spoonful of the cooked turkey and spinach mixture to each muffin cup.
  • Bake in the oven for 15-20 minutes, until set and lightly golden.
  • Let cool slightly, then remove from the muffin tins.
  • Serve warm with your favorite dips.
