Directions:
In a slow cooker, combine the chicken, chicken broth, onion, carrots, celery, garlic, lemon juice, lemon zest, dried thyme, salt, and pepper. Also add in butter chunks. Stir to combine.
Cover the slow cooker and cook on low for 6-8 hours or on high for 4-6 hours, until the chicken is cooked through and the rice is tender.
With about 30 mins left, shred the chicken (can do this outside of slow cooker) and put back in. Add the minute rice. Cook for another 30 minutes on high.
Ladle the soup into bowls and garnish with fresh parsley.
