  • In a medium bowl, whisk together kefir, egg, sugar, and salt.

  • Sprinkle baking soda over the mixture and whisk gently.

  • Gradually add flour and mix until a thick, spoonable batter forms.

  • Heat a non-stick skillet or pancake mold pan over low-medium heat. Lightly grease molds or the pan surface with measured oil.

  • Spoon the batter into round molds (or carefully shape thick rounds with a spoon).

  • Cover with a lid and cook for 3–4 minutes on one side until bubbles appear and edges set.

  • Flip gently and cook another 2–3 minutes until golden and puffed.
