  • Preheat oven to 325°F (160°C). Line a 9x13-inch baking pan with parchment paper and lightly spray with non-stick spray.

  • In a bowl, sift together self-rising flour, cocoa powder, and salt.

  • In a large bowl, beat eggs and sweetener mixture for 8 minutes until pale and voluminous.

  • Add vanilla extract, melted light butter, applesauce, and almond milk. Fold gently.

  • Gradually fold in dry ingredients until just combined, keeping the batter airy.

  • Pour batter into the prepared pan and spread evenly.
