Taco Fiesta Bubble up Casserole Directions:
Instructions:
- Cook the extra lean ground beef in a skillet over medium heat. Add taco seasoning and simmer for a few minutes according to package directions.
- Preheat oven to 350°F. Spray a 9×13-inch casserole dish with cooking spray and set aside.
- In a bowl, mix the cooked ground beef and salsa together.
- Dice the peppers and onions, and cut each biscuit into 6 pieces.
- Place half of the biscuit pieces in the bottom of the casserole dish. Top with half of the ground beef mixture, half of the diced peppers and onions, and half of the shredded cheese.
- Repeat the layers with the remaining biscuit pieces, beef mixture, vegetables, and cheese. Sprinkle green onion on top.
- Cover loosely with foil and bake in the preheated oven for 35 minutes. Remove the foil and continue baking for another 15 minutes.
- Let the casserole cool for 5 minutes before cutting it into 6 servings. Optionally, top each serving with a spoonful of fat-free sour cream.
