Directions:
Combine figs water and lemon zest in large saucepan.
Simmer ingredients over medium low heat stirring constantly.
when mixture becomes thick and sticky add lemon juice.
Cover and simmer over low heat for one hour, stirring occasionally.
Uncover and add vanilla extract.
Blend all ingreddients lightly with an emersion blender.
Do not over blend.
Let all ingredients simmer for fifteen minutes.
Remove from heat and allow to cool.
Fill prefered containers with jam.
For canning use an approved canning method and follow canning instructions.
Note:
I like mission figs for this recipe but brown turkey is also a great option. I havn't tried using the kadota fig in this recipe, but it may be a good option with a sweeter outcome.
