Stuffed Mini Sweet Peppers Directions:

  1. Preheat an air fryer to 350°F.
  2. Cut a slit down the length of each mini pepper from the stem to the tip. Lightly coat the peppers with cooking spray.
  3. Place the peppers in the air fryer basket and cook for 5 minutes. Shake the basket and continue cooking for another 3 minutes. Transfer the peppers to a cutting board and let cool slightly.
  4. In a medium bowl, mix the cream cheese, cheddar cheese, yogurt, parsley, dill, salt, black pepper, and garlic (if using) until well combined.
  5. Using a small spoon, stuff about 2 teaspoons of the filling into each pepper through the slit.
  6. Arrange the stuffed peppers in a single layer in the air fryer basket. It's fine if they’re slightly crowded.
  7. Return the basket to the air fryer and cook for 4–5 minutes, or until the peppers are tender and the filling is lightly browned on top.
  8. Serve warm and enjoy!
