Southern Brunswick Stew Directions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Sear the chicken and pork on all sides until browned. Remove from the pot and set aside.
- Add the chopped onion and minced garlic to the pot, sautéing until softened and fragrant, about 5 minutes.
- Return the chicken and pork to the pot. Stir in the crushed tomatoes and chicken broth.
- Add the corn, chickpeas, and diced sweet potato. Mix well.
- Stir in the barbecue sauce, Worcestershire sauce, salt, black pepper, and smoked paprika.
- Bring the stew to a boil, then lower the heat to a simmer. Cover and cook for 1.5 to 2 hours, stirring occasionally, until the meat is tender and the flavors have melded.
