Snickerdoodle Banana Bread Directions:

  • Preheat oven to 350ºF. Spray a loaf pan with non-stick spray.
  • In a small bowl, mix 1/4 cup sugar substitute with 1 teaspoon cinnamon. Sprinkle a small amount of the mixture into the prepared loaf pan to coat the sides and bottom lightly. Set aside.
  • In a large bowl, whisk together mashed bananas, unsweetened applesauce, eggs, Greek yogurt, and vanilla extract until smooth.
  • In a separate bowl, combine almond flour, baking soda, salt, and the remaining cinnamon sugar mixture.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool for 15 minutes before slicing and serving.
