Shrimp Egg Roll Bowl Directions:

In a bowl, marinate the shrimp with soy sauce, sesame oil, rice vinegar, minced ginger, and minced garlic. Set aside to marinate for 15-20 minutes.

Heat olive oil in a large skillet or wok over medium-high heat. Add the sliced onion and bell pepper, and stir-fry for 2-3 minutes until they begin to soften.

Add the marinated shrimp to the skillet, along with any marinade remaining in the bowl. Cook the shrimp for 2-3 minutes on each side until pink and opaque.

Stir in the shredded cabbage and julienned carrot, and continue to cook for another 2-3 minutes until the vegetables are tender-crisp.
Remove the skillet from heat and sprinkle chopped green onions and sesame seeds over the shrimp and vegetable mixture.
Serve the shrimp egg roll bowl hot, either on its own or over a bed of cooked rice or cauliflower rice for a complete and satisfying meal.
