Oatmeal Quick Bread Directions:

In a large bowl, mix the oats with warm water and let sit for 10 minutes.
Add the chopped pumpkin, sweetener, cinnamon, salt, vegetable oil and sesame seeds to the oat mixture. Mix well.
Add the previously chopped dried apricots, chia seeds and chopped walnuts to the mixture and stir until well combined.
Add the mixture of nuts, seeds and dried fruits, as well as the baking powder, and continue mixing until you obtain a homogeneous dough. We clarify that the classic bread dough is not formed, it is normal and that is how it should remain.
Place the parchment paper on a baking pan and pour the dough into it, making sure to distribute it evenly.
Lightly moisten the top of the bread with warm water and bake in a preheated oven at 180°C (360°F) for about 20 minutes, or until golden and cooked through.
