Pumpkin Shaped Cheeseball Directions
- In a medium bowl, combine the cream cheese, Laughing Cow cheese wedges, and ranch seasoning.
- Fold in ½ cup of the reduced-fat shredded cheese. Mix until well combined.
- Using a rubber spatula or your hands, shape the mixture into a ball.
- Transfer the mixture to a large piece of plastic wrap, continuing to shape the cheese into a round ball.
- Wrap twine or 3-4 thick rubber bands around the cheese ball to shape it into a pumpkin. Refrigerate for at least 4 hours or overnight until firm.
- Remove the twine or rubber bands and plastic wrap.
- Gently press the remaining ½ cup of shredded cheese on the outside of the cheese ball.
- Top the pumpkin with the bell pepper stem to finish. Serve with crackers or your favorite veggies!
You can make this ahead of time; it keeps well for 2-3 days when wrapped and stored in the refrigerator.
