Pretzel Bites Directions

  • Place warm water, instant yeast, and brown sugar in a stand mixer. Let it sit for 2 minutes or until the yeast is foamy and activated. (If the yeast doesn’t get foamy, your yeast may not be good.)
  • Add the salt and flour into the mixer. Mix on low speed using the dough hook until combined. Increase the speed to medium and knead for about 5 minutes or until the dough is smooth and pulls away from the side of the bowl.
  • Spray a large mixing bowl with nonstick cooking spray. Place the dough in the bowl, flipping it over so the top is lightly coated with the spray. Cover with plastic wrap and let rise until doubled in size, about 45-60 minutes.
  • Transfer dough to a clean surface. Divide into six pieces and roll each into 12-inch long ropes. Cut each rope into six 2-inch pieces.
  • Preheat oven to 425°F.
  • In a large pot, add water and baking soda and bring to a boil. Spray 2 baking sheets with nonstick cooking spray or line with parchment paper.
  • Boil 12-14 pretzel bites for 25-30 seconds, then use a slotted spoon to transfer them to the prepared baking sheets, making sure they don’t touch. Let cool for 2 minutes.
  • Continue boiling the remaining pretzel bites in batches.
  • Brush the tops of the pretzel bites with egg wash and sprinkle with coarse salt.
  • Bake for 8-12 minutes or until deep golden brown.
  • Serve immediately.
