Peasy Lemon Cake Directions:
- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper.
- In a large mixing bowl, combine the sugar-free yellow cake mix, non-fat sugar-free lemon Greek yogurt, 7 Up or Sprite Zero, and lemon juice. Mix until smooth.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for about 45 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the glaze by mixing the powdered monkfruit sweetener, water, and lemon juice in a small bowl until smooth.
- Once the cake is done, remove it from the oven and allow it to cool slightly.
- Drizzle the glaze over the top of the warm cake.
- Once cooled, cut the cake into 12 large pieces.
