Pancake Fajitas Ingredients:
For the Pancakes:
- 1 cup whole wheat flour
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 1 cup unsweetened almond milk
- 2 large egg whites
- 1 tablespoon olive oil (for greasing the pan)
For the Fajita Filling:
- 2 large bell peppers (1 red, 1 green), sliced into strips
- 1 medium onion, sliced into strips
- 1 medium zucchini, sliced into strips
- 1 cup cherry tomatoes, halved
- 1 can (15 ounces) black beans, drained and rinsed
- 2 tablespoons olive oil (for sautéing vegetables)
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper, freshly ground
For the Toppings:
- ½ cup plain Greek yogurt
- 2 tablespoons fresh cilantro, chopped
- 4 lime wedges
