Prepare all ingredients: slice onions and green onions, mince garlic, and beat eggs in a small bowl.

If desired, marinate the beef with 1 tablespoon soy sauce and ½ teaspoon sesame oil for 10–15 minutes.

If using eggs:

Heat ½ tablespoon of vegetable oil in a wok or large skillet over medium-high heat.

Pour in the beaten eggs and scramble quickly until just set. Remove from the wok and set aside.

Add the remaining ½ tablespoon of vegetable oil to the wok.

Add sliced onions and cook for 3–4 minutes until soft and lightly caramelized.

Stir in minced garlic and cook for 30 seconds until fragrant.

Push onions to one side of the wok and add sliced beef in a single layer.

Sear beef for 1–2 minutes per side until browned, then mix with onions and cook until just cooked through.

Add the chilled rice, breaking up any clumps. Stir-fry for 2–3 minutes, pressing down slightly to get some crisp edges.

Pour in soy sauce and oyster sauce, drizzle with sesame oil, and mix well.

Add back the scrambled eggs (if using) and stir to combine.
