Directions:
In a large bowl, blend mashed potato, milk, vanilla, and salt with an electric mixer for a few minutes.
Gradually add powdered sugar, 1 cup at a time, until a thick dough forms. If needed, add more in 1 tablespoon increments.
Shape the dough into a ball, roll it into a 1/8-inch thick, 10x12-inch rectangle, and sprinkle with powdered sugar.
Spread peanut butter evenly, roll it tightly using parchment paper, and freeze for 1 hour.
Slice into 1/4-inch thick pieces and serve.
Store leftovers in the refrigerator in an airtight container.
