  • Bring 1 cup of unsweetened almond milk to a boil in a medium saucepan over medium heat.
  • Once boiling, reduce heat to low and stir in 1 cup of oatmeal. Cook for 5-7 minutes, stirring occasionally, until the oats absorb the milk and become creamy. Add extra milk if you prefer a more liquid consistency.
  • In a separate pan, scramble 3 eggs over medium heat. Stir continuously until fully set, soft, and moist. Season with salt and pepper. Set aside.
  • Once oatmeal is done, remove from heat and stir in the chopped apple and sliced banana. The heat from the oats will gently soften the fruit.
  • Stir in the chopped walnuts.
  • Divide oatmeal mixture into bowls and top with scrambled eggs. Optional: Add extra fruit or a sprinkle of cinnamon or nutmeg.
