Nana's Sticky Gooey Cinnamon Rolls Directions:

  • To prepare the dough, combine the flour, granulated sugar substitute, yeast, and salt in a large mixing bowl.
  • Add the unsweetened almond milk, melted light butter, and egg to the dry ingredients. Mix until a soft dough forms.
  • Knead the dough on a lightly floured surface for about 6–8 minutes until it becomes smooth and elastic.
  • Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place until it has doubled in size, about 1–1.5 hours.
  • Once the dough has risen, roll it out on a floured surface into a 16x9-inch rectangle.
  • Spread the softened light butter evenly over the dough.
  • In a small bowl, mix together the brown sugar substitute and cinnamon, then sprinkle this mixture over the buttered dough.
  • Starting from the long edge, roll the dough tightly into a log.
  • Cut the log into 12 even slices and place them in a greased 9x13-inch baking dish.
  • Cover the dish with a cloth and let the rolls rise for another 30 minutes.
  • Preheat the oven to 350°F (175°C).
  • Pour the skim milk evenly over the rolls before baking.
  • Bake for 25–30 minutes or until golden brown.
  • In a small bowl, whisk together powdered sugar substitute, skim milk, and vanilla extract to make the icing.
  • Drizzle the icing over the warm rolls before serving.
