Mustard Pork Chops with Creamy Scalloped Potatoes Directions:

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, combine Dijon mustard, cooking spray, garlic powder, salt, and pepper. Spread this mixture evenly over the pork chops and let them marinate while you prepare the potatoes.
  • In a saucepan, melt the light butter over medium heat. Add the onions and cook until soft and translucent, about 4-5 minutes. Add the minced garlic and cook for another minute.
  • Sprinkle the flour over the onion mixture and whisk until smooth. Gradually add the almond milk, whisking constantly until the sauce begins to thicken.
  • Stir in the shredded fat-free cheddar cheese, thyme, and paprika. Mix until the cheese is melted and the sauce is smooth. Remove from heat.
  • In a greased 9x13 inch baking dish, layer half of the potato slices. Pour half of the cheese sauce over the potatoes, spreading it evenly. Repeat with the remaining potatoes and cheese sauce.
  • Arrange the marinated pork chops on top of the potatoes. Cover the baking dish with aluminum foil.
  • Bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the pork chops are fully cooked and the potatoes are tender and golden brown.
  • Let the dish rest for a few minutes before serving.
