Mushroom Meatballs in Creamy Mushroom Sauce Directions:

  • In a large bowl, combine the ground beef, egg, onion, garlic, cabbage, parsley, salt, and pepper. Mix until evenly combined.
  • Shape the mixture into small meatballs, about 1 to 1.5 inches in diameter.
  • Heat a non-stick pan over medium heat and lightly spray it with non-stick cooking spray.
  • Brown the meatballs in the pan, turning occasionally, for about 10 minutes until cooked through and browned on all sides. Remove from the pan and set aside.
  • In the same pan, add the chopped mushrooms and sauté over medium heat for about 5 minutes until browned.
  • Lower the heat and stir in the fat-free Greek yogurt, allowing it to simmer for 2-3 minutes until the sauce thickens. Season with salt and pepper to taste.
  • Add the meatballs back to the pan, coating them in the creamy mushroom sauce. Simmer for another 5 minutes to let the flavors meld.
  • Serve warm over a bed of vegetables, mashed cauliflower, or a low-point pasta alternative.
