Miracle Muffins Directions:

  • Preheat Oven:

    • Preheat your oven to 350°F (175°C). Lightly spray a 6-cup muffin tin with cooking spray or line with paper liners.
  • Prepare the Batter:

    • In a medium bowl, mash the ripe bananas until smooth.
    • Add the beaten eggs to the mashed bananas and mix until well combined.
    • Stir in the Kodiak Cakes mix until just incorporated; avoid overmixing.
  • Fill Muffin Cups:

    • Evenly distribute the batter among the 6 prepared muffin cups.
  • Bake:

    • Place the muffin tin in the preheated oven and bake for 22-25 minutes, or until the muffins are set, the tops appear dry, and a light golden brown.
    • To check for doneness, insert a toothpick into the center of a muffin; it should come out clean or with a few moist crumbs.
  • Cool and Serve:

    • Remove the muffin tin from the oven and allow the muffins to cool in the tin for a few minutes.
    • Transfer the muffins to a wire rack to cool completely.
