Minty Brownie Bread Directions:

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set it aside.
  • In a large bowl, whisk together the melted light butter and granulated sugar substitute until well combined.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • In a separate bowl, mix together the whole wheat flour, cocoa powder, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  • Fold in the dark chocolate chips and chopped mint.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 45-50 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
  • Allow the brownie bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
