Easy Mini Egg Quiches Directions:

  • Preheat the oven to 400°F.
  • Grease a muffin pan.
  • In a bowl, beat the eggs, milk, grated onion, and season with salt and pepper using a fork until well-combined.
  • Cut and line each muffin hole with low-fat pastry.
  • Divide the chopped ham and 1/2 cup of the reduced-fat cheese into the muffin holes, then spoon in the egg mixture. Top with the rest of the cheese.
  • Bake for 20-25 minutes or until the quiches are golden and set.
