Mini Apple Muffins Directions:

  • Preheat your oven to 350°F (175°C). Lightly spray a mini muffin tin with cooking spray or use mini muffin liners.
  • In a medium bowl, whisk together the unsweetened applesauce, almond milk, egg, vanilla extract, and Lakanto Golden until smooth.
  • In a separate bowl, combine the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Gradually fold the dry ingredients into the wet mixture, stirring until just combined. Do not overmix.
  • Fold in the diced apple pieces.
  • Spoon the batter evenly into the mini muffin tin, filling each cup about 3/4 full.
  • Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
