Mediterranean Grilled Cheese Sandwich Directions:

  • Lightly spray one side of each bread slice with non-stick cooking spray.
  • On the unsprayed side of two slices, sprinkle half of the reduced-fat mozzarella cheese.
  • Layer the sun-dried tomatoes, Kalamata olives, fresh basil, fat-free feta cheese, and dried oregano (if using).
  • Top with the remaining reduced-fat mozzarella cheese, then complete each sandwich by placing the other two bread slices on top (sprayed side out).
  • Heat a non-stick skillet or griddle over medium heat and grill each sandwich for 2–3 minutes per side until the bread is golden and the cheese is melted.
  • Slice each sandwich diagonally and serve warm.
