Meatloaf with Mashed Potatoes Directions:

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • Soak the whole wheat breadcrumbs or oats in unsweetened almond milk for 5 minutes in a small bowl.
  • In a large bowl, combine ground turkey, soaked breadcrumbs or oats, chopped onion, garlic, eggs, Worcestershire sauce, salt, pepper, and thyme. Mix thoroughly.
  • Form the mixture into a loaf shape and place it in the prepared baking dish.
  • In a small bowl, mix sugar-free ketchup and sweetener. Spread this mixture over the top of the meatloaf.
  • Bake for 50-60 minutes or until the internal temperature reaches 160°F (71°C).
  • For the cauliflower mash, steam or boil the cauliflower until soft. Drain and mash with almond milk, reduced-fat butter, salt, and pepper.
  • Once the meatloaf is done, spread cauliflower mash on top and sprinkle with reduced-fat cheddar cheese. Broil for 3-5 minutes until the cheese melts.
  • Let the meatloaf sit for 10 minutes before slicing and serving. Garnish with chopped parsley.
