Mango & Raspberry Panna Cotta Ingredients:
Mango Layer
- 1 cup (250ml) unsweetened mango nectar
- 1 1/2 cups fresh mango puree (from 2 mangoes, about 485g/1lb)
- 1 1/2 tbsp gelatine powder
- 1 mango, diced (for garnish)
Raspberry Layer
- 2 tbsp sugar-free raspberry jam
- 1/2 cup + 3 tbsp (150ml) boiling water
- 1 tbsp gelatine powder
- 1/4 cup (50ml) water
Panna Cotta Layer
- 1 cup (250ml) unsweetened almond milk
- 1 1/2 tbsp gelatine powder
- 2 tbsp sweetener (sugar substitute)
- 1 tsp vanilla essence
- 1 cup (250ml) light cream (10% fat)
