Mango & Raspberry Panna Cotta Ingredients:

Mango Layer

  • 1 cup (250ml) unsweetened mango nectar
  • 1 1/2 cups fresh mango puree (from 2 mangoes, about 485g/1lb)
  • 1 1/2 tbsp gelatine powder
  • 1 mango, diced (for garnish)

Raspberry Layer

  • 2 tbsp sugar-free raspberry jam
  • 1/2 cup + 3 tbsp (150ml) boiling water
  • 1 tbsp gelatine powder
  • 1/4 cup (50ml) water

Panna Cotta Layer

  • 1 cup (250ml) unsweetened almond milk
  • 1 1/2 tbsp gelatine powder
  • 2 tbsp sweetener (sugar substitute)
  • 1 tsp vanilla essence
  • 1 cup (250ml) light cream (10% fat)
