Low-Point Sugar-Free Energy Dessert Directions:

Chop the assorted dried fruits into small pieces if needed. Coarsely chop the walnuts, peanuts, and pumpkin seeds.

In a small bowl, sprinkle the fast-dissolving gelatin over 2 tablespoons of cold water. Let it sit for 5 minutes to soften.

In a large mixing bowl, combine the cottage cheese and plain yogurt. Mix well until smooth and creamy.

Microwave the gelatin mixture for about 10-15 seconds until it is completely dissolved. Stir to ensure there are no lumps.

Add the softened gelatin to the cottage cheese mixture. Stir until well combined.

Gently fold in the chopped dried fruits, walnuts, peanuts, and pumpkin seeds into the cottage cheese mixture. Ensure everything is evenly distributed.

Line a baking dish or a square container with parchment paper. Pour the mixture into the prepared dish, spreading it evenly with a spatula.

Cover the dish with plastic wrap or another layer of parchment paper. Refrigerate for at least 2 hours, or until the mixture is set.

Once set, remove from the refrigerator and cut into squares or bars as desired. Serve chilled.
