Low Point Peach Pretzel Jello Salad Directions:

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, mix the crushed pretzels, melted light butter, and granulated sugar. Press the mixture into the bottom of a 9x13-inch baking dish to form the crust.
  • Bake the crust for 10 minutes, then remove from the oven and let it cool completely.
  • In a large bowl, beat the softened cream cheese, Greek yogurt, Splenda, and vanilla extract until smooth and creamy.
  • Spread the cream cheese mixture evenly over the cooled pretzel crust. Be sure to spread it all the way to the edges to seal the crust and prevent the jello layer from seeping through.
  • In another bowl, dissolve the sugar-free peach gelatin in boiling water. Stir in the cold water and let it cool to room temperature.
  • Once the gelatin is cooled, gently stir in the sliced peaches.
  • Pour the gelatin mixture over the cream cheese layer and refrigerate until the jello is fully set, about 4-6 hours or overnight.
  • Slice into 16 squares and serve chilled.
