Low Point Old Fashioned Rice Pudding Directions:
- In a medium saucepan, combine the rice, water, and salt. Bring to a boil over medium heat.
- Reduce heat to low, cover, and simmer until the water is absorbed and the rice is tender, about 15-20 minutes.
- Stir in 1 1/2 cups of the unsweetened almond milk and the sugar-free sweetener. Cook over medium heat, stirring frequently, until the mixture begins to thicken, about 15 minutes.
- In a small bowl, beat the eggs with the remaining 1/2 cup of almond milk. Gradually stir the egg mixture into the rice, cooking for another 2 minutes until thickened, but do not boil.
- Remove the pudding from heat and stir in the vanilla extract and light butter until well combined.
- Transfer the pudding to a serving dish and allow it to cool slightly. The pudding will continue to thicken as it cools.
- Sprinkle with ground cinnamon if desired before serving.
