- 2 bay leaves
- 2 pounds lean ground turkey
- 2 tablespoons tomato paste
- 1 ounce dark chocolate or 1 tablespoon cocoa powder
- 1 bottle or can (12 ounces) dark beer
- 1 tablespoon chopped chipotle pepper
- 1 can (28 ounces) whole peeled tomatoes
- 1 can (14 ounces) white beans, rinsed and drained
- 1 can (14 ounces) pinto beans, rinsed and drained
- Salt and black pepper to taste
- Optional: hot sauce or cayenne pepper to taste
- Optional toppings: raw onions, shredded cheese, chopped scallions, lime wedges, sour cream
