Loaf Pan Cheesecake Directions:

  • Preheat oven to 325°F (163°C) and line a loaf pan with parchment paper.

  • In a bowl, combine light graham crumbs, melted light butter, and sweetener. Press into the base of the loaf pan to form a thin crust.

  • In a separate bowl, beat Greek yogurt and cream cheese until smooth. Add sweetened condensed milk, eggs, vanilla, lemon juice, and cornstarch. Mix until well combined.

  • Pour the filling over the crust and smooth the top with a spatula.

  • Bake for 40–45 minutes or until the center is set but slightly jiggly.

  • Cool completely at room temperature, then refrigerate for at least 3 hours.

  • Top with optional sweetened yogurt, fresh berries, or drizzle just before serving.
