Lightened Up Morning Glory Muffins Directions:

  • Preheat your oven to 375°F (190°C). Spray a 12-cup muffin tin with non-stick cooking spray or line it with paper liners and spray the insides of the liners.
  • In a small bowl, cover the raisins with hot water and let them soak for at least 10 minutes.
  • In a large bowl, whisk together the flour, brown sugar sweetener, baking soda, cinnamon, ginger, and salt.
  • Stir in the shredded carrots, shredded apple, coconut, walnuts, and wheat germ until well combined.
  • In a separate bowl, whisk together the eggs, unsweetened applesauce, orange juice, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to over-mix to avoid dense muffins.
  • Drain the soaked raisins and gently fold them into the batter.
  • Using a 1/3 cup measure, evenly distribute the batter among the prepared muffin cups, filling each about 3/4 full.
  • Bake for 25 to 28 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
