Light and Heavenly Cream Cheese Cake Directions:
- Preheat your oven to 320°F (160°C) and lightly grease a 9-inch springform pan. Optionally, line the bottom with parchment paper for extra assurance.
- In a double boiler, melt the cream cheese, unsalted butter, and milk together. Stir gently until the mixture is smooth and well combined. After melting, set the mixture aside and allow it to cool to room temperature.
- While the cream cheese mixture is cooling, sift together the all-purpose flour, cornstarch, and salt into a separate bowl.
- Once the cream cheese mixture has cooled, sift the dry ingredients into the bowl. Mix until smooth and fully combined.
- Add the egg yolks into the cream cheese mixture and mix until smooth.
- In a separate bowl, whisk the egg whites with the cream of tartar using an electric mixer. Whisk on high speed until the mixture becomes foamy. Gradually add the sugar while continuing to beat until soft peaks form.
- Gently fold the egg whites into the cream cheese mixture in thirds, using a spatula to lift and fold the mixture until everything is evenly combined.
- Pour the batter into the prepared springform pan and smooth the top evenly with a spatula.
- Place the springform pan into a larger roasting pan filled with hot water (water bath method). Bake for 1 hour and 10 minutes, or until golden brown and set in the middle.
- After baking, turn off the oven and leave the cake in the oven with the door slightly ajar for 1 hour to cool gradually.
- Once the initial cooling time is over, remove the cake from the oven and allow it to cool completely in the springform pan.
- Once cooled, run a knife along the edges of the pan to loosen the cake and remove the sides of the springform pan.
- Refrigerate the cake for at least 4 hours or overnight. Let it sit at room temperature for 15 minutes before serving for the best flavor.
