Lemon Zucchini Heaven Bread Directions:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a medium bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, beat the eggs, unsweetened applesauce, and granulated sugar substitute until well combined.
  • Add the unsweetened almond milk, vanilla extract, grated zucchini, lemon zest, and lemon juice to the egg mixture and mix well.
