Lemon Butter Salmon with Crispy Potatoes and Roasted Broccoli Directions:

  • Preheat your oven to 425°F (220°C). Wash and cut the potatoes into small cubes (about 1-inch pieces). In a large bowl, toss the potatoes with olive oil, garlic powder, rosemary, salt, and pepper. Spread them evenly on a baking sheet in a single layer.
  • Roast the potatoes in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden brown and crispy on the edges. Keep an eye on them to make sure they don’t burn.
  • While the potatoes are roasting, prepare the broccoli. Toss the broccoli florets with olive oil, salt, pepper, and red pepper flakes (if using). Spread them on a separate baking sheet or use the same one once the potatoes are done. Roast in the oven for 15-20 minutes, until tender and slightly crispy on the edges.
  • While the potatoes and broccoli are roasting, heat a large skillet over medium-high heat. Add 1 tbsp of olive oil to the skillet. Season the salmon fillets with salt and pepper on both sides. Place the salmon fillets in the hot skillet, skin-side down if using skin-on salmon. Cook for 4-5 minutes on the first side until the salmon is golden and crispy.
  • Flip the salmon fillets and add 1 tbsp of butter to the skillet, along with the minced garlic. Allow the butter to melt, then spoon the melted butter over the salmon for flavor. Squeeze the juice of half a lemon over the salmon and cook for an additional 3-4 minutes until the salmon is cooked through (internal temperature of 145°F). If desired, sprinkle with fresh parsley and lemon zest.
  • Once the potatoes, broccoli, and salmon are cooked, plate everything together. Serve the crispy potatoes and roasted broccoli alongside the lemon butter salmon. Garnish with extra lemon wedges if desired.
