Lemon Blueberry Turnovers Directions:

  • In a mixing bowl, combine Greek yogurt, self-rising flour, and 2 teaspoons of the monkfruit sweetener. Knead until the mixture forms a smooth dough.
  • Wrap the dough in parchment paper and refrigerate for a few hours to rest.
  • For the blueberry compote, add blueberries, water, and the remaining monkfruit sweetener to a saucepan over medium heat. Allow the mixture to bubble and thicken slightly, then remove from heat.
  • In a separate small bowl, mix a spoonful of the blueberry juice with 1/2 teaspoon of cornstarch, stirring until smooth. Pour this mixture back into the blueberry compote, stirring well. Set aside to cool.
  • On a floured surface, roll out the chilled dough into a thin sheet, adding flour as needed to prevent sticking. Use a small glass to cut out circles from the dough.
  • Place each dough circle onto a parchment-lined baking sheet and roll each one thinner. Spoon 1 teaspoon of the blueberry compote onto one side of each circle. Fold the dough over and crimp the edges with a fork to seal. Brush the tops with milk.
  • Bake in a preheated oven at 350°F (175°C) for 14-16 minutes, or until lightly browned.
